Can you complete Baldur's Gate 3 without stopping? Perhaps, but one player has demonstrated that it transforms the RPG into a nightmare.

Long rests are pretty much required in Baldur's Gate 3 because they restore health, reset skill slots, and are required for progressing through multiple quests.

One content creator ignored all of this and instead challenged themselves to finish the massive RPG without taking long breaks.

Is it conceivable? Perhaps, but sleep deprivation leads to waking nightmares (aka a massive headache). Fracture, a YouTuber, completed Act 1 with almost no long rests.

There is one mandatory long rest in the first Act, but Fracture fully healed his party before resting and used his skills upon awakening, so his party didn't feel the effects of sleeping in the first place.

Elsewhere, the content creator got through the early hours by cheesing everything. The first four levels were obtained by avoiding combat whenever possible and talking through problems.

Mandatory fights were completed in the most efficient manner possible, including pushing opponents off ledges, reanimating a spider matriarch, and using explosive barrels.

Basically, anything that saved money on healing potions was highly encouraged.  The 'No Long Rests Run'

is extremely entertaining to watch because Fracture employs tactics that most players would never think of.
